Julian Haart, based in Piesport in the Mosel Valley, is among Germany’s most talented and visionary Riesling producers. Farming is organic, yields are extremely low, and all harvesting is done by hand on the vertiginous slopes of Piesporter Goldtröpfchen and Schubertslay. Haart’s approach in the cellar is equally meticulous: spontaneous fermentations, long lees aging, and minimal intervention to preserve clarity.
